Tinga Tacos ★★★★
Using the recipe Easy One-Pot Chicken Tinga from The Food Lab.
The one change I made to this recipe was to use one whole leg (thigh and drumstick) instead of a second chicken breast so we could have a variety of both light and dark meat. In retrospect, I don’t think it matters too much, as the chicken breast ends up very tender.
Topped with finely diced white onion, clilantro, cotija cheese. Served with a wedge of lime to squeeze over, and fresh sliced radishes.
I unfortunately didn’t have enough chicken meat on hand, so this batch turned out overly saucy. I plan on poaching additional chicken this week to mix with the extra sauce.
