Guinness Beef Stew ★★★★

I made this back at the beginning of February in commemoration of St. Brigid’s Day, but with St. Patrick’s Day coming up, sharing this now is timely.
I was hesitant at first to use a bittersweet chocolate in an Irish stew, but it makes sense to complement the flavors of Guinness. I had no qualms about using fish sauce, however, since I use it for an umami punch in almost every sauce, soup, and stew that I make.
The stew was very good, with rich flavor. My only wish was that the stew liquid was thicker, but that happened as it cooled, since there was a high gelatin content in the stew.
