Risotto with Porcini and Peas ★★★★
If you’ve talked to me about cooking recently, you know I sing the praises of my Instant Pot often.
When I was told I could have risotto with minimal effort (No babysitting! No stirring!), in less than 15 minutes, I was skeptical. But wow, it’s great! I used the guidelines from Hip Pressure Cooking and customized it this time with foraged porcinis from my friend Danny and some frozen peas.
Served alongside some pork tenderloin medallions, but they weren’t the star of the show here. 😉
